In dai pai dong, cha chaan teng and many popular restaurants in Hong Kong, milk tea and other tea beverages are often strained with a large cloth teabag to meet the high demand of daily operations. Most teabags are either made from ‘grey’ or ‘greige’ cloth, which are fabrics of undyed cotton, or from bleached cotton fabric, and are used to brew tea and filter tea leaves. Like many techniques and recipes in the food industry that are not disclosed to outsiders, many tea brewers regard their formulas as a ‘trade secret’ and have their own recipe and preferences on the thickness, density and texture of a teabag.

The story goes that a tea merchant in the early 20th century packed tea leaves in small silk pouches to be distributed to potential customers as samples. The customers, however, misunderstood and brewed tea directly in the pouches. And so, the teabag was born.
